Sometimes vegetarian food can be so substantial and executed so beautifully that any cravings for meat are completely lost. Such in the case for Boucherie’s Roasted Beets with Aromatic Red Rice Risotto and Beet Chips. This $11 large plate featured on the restaurant’s November menu* is not only gorgeous to look at, with it’s bright red and yellow colors, but also quite delicious. Roasting beets brings out their naturally sweet, earthy flavor, which I’ve come to realize people either love or hate. I love them, of course, and Boucherie’s white and red beets stuffed with rice and topped with crispy beet chips is complete heaven for those of us who are fond of the root vegetable. My friend and I shared this dish along with the Citrus Marinated Duck Breast with Harvest Pumpkin and Sunchoke Hash, but I can easily see how pairing the Roasted Beets with the Baby Greens Salad with Herb Vinaigrette would make for a healthy, filling, and totally vegetarian meal.
*Boucherie’s menu is re-created monthly to make sure that they’re offering the best of what’s in season. The roasted beets may not be featured come December, but I’ve noticed that their menu almost always features a tempting vegetarian option.
